So you’re starving, there’s nothing in the fridge or the pantry except for a carrot, a handful of peas, a tomato and a packet of 2 Minute Noodles. Well, no worries – here’s a quick easy recipe on how to make the 2 Minute Noodles into a more interesting meal…

2 MINUTE NOODLES WITH A TWIST:
You will need:
- 1 packet instant noodles, cooked according to instructions
- 1 small onion chopped
- 1 small tomato chopped
- 1 small carrot chopped into matchsticks
- Handful of garden peas
- 1/2 teaspoon crushed garlic
- 1/2 teaspoon crushed ginger
- Dark Soya Sauce
- Dash of chilli sauce (Tabasco is good)
METHOD:
Drain any excessive water from the noodles after cooking them as per instructions. In a wok or non-stick pan add 1 tablespoon cooking oil. Sautee the onions lightly and add the ginger and garlic.
Add the veggies and the sauces and then the noodles. Cook for another minute or so and your noodles are ready to eat!
***I like to add a tin of drained tuna flakes in brine, chopped cooked sausages, soya chunks, chopped roast chicken or turkey bits, ham or salami sliced into strips, sweetcorn, mushrooms, snow peas or whatever else tickles my fancy. It’ all about experimenting and making do with what is available in your fridge or pantry.
