Kids are going back to school next week and I’ve been planning their break-box menus. The school has a healthy snack box policy and even though I like to make their snacks myself, I sometimes get saturated thinking of different things to pack for them. I also realise that most kids are not fussy at all and there is nothing like a cupcake in their break box to make them squeal with delight. Well, mine do!
Here’s an easy cupcake recipe that yields a dozen cupcakes. I usually allow the kids to decorate them. Sometimes we don’t get beyond the quality testing stage…
Basic Vanilla Cupcakes:
You will need:
150g butter
150g castor sugar
175g self-raising flour
3 eggs
1tsp vanilla essence
Method:
Preheat the oven to 180oC. Line a cupcake tray with paper cases.
Beat eggs lightly with a fork in a small on the side. Place the rest of the ingredients in a bowl and beat with an electric mixer until light and fluffy. Add the eggs and beat on a low speed for another minute.
Divide the mixture into the cup cake cases and bake for at least 18-20 minutes until risen and firm to the touch. For fan ovens reduce baking time by 5 minutes.
Allow to cool in the tray before turning out on a wire rack to cool further.
Decorate as you wish when the cup cakes are cool.
