I had a yield of Matoke from the shamba. I thought they were bananas all this time. I was ready to go sell them from my car boot on Kiambu Road.
This is only relevant and funny if you’re a Kenyan!
Anyway, I decided to experiment.
Kids are impressed.

5 pieces matoke (plantain)
1 litre oil for frying
If you have a mandolin slicer, use that to slice the peeled and washed matoke and fry immediately.
If not, you can always slice them thinly with a sharp knife, or even cut them into chips.
Please make sure you wash the matoke to take the starch out.
Dry on kitchen roll.
Water in hot oil isn’t safe.
Fry for around five minutes and drain on kitchen roll.
Sprinkle lightly with salt.
