Eggless Cake

A very close friend of mine is coming home for tea tomorrow and he is vegetarian and doesn’t eat eggs in cakes either so I thought I’d try a recipe with no eggs. Problem is the recipes passed down to me have things like dates and nuts in them and he’s not too fond of that stuff so I thought I’d devise a recipe. I tried it out and I am overjoyed it turned out so well! The only thing is that I forgot to put the cocoa in it but what the heck…. it is now a vanilla sponge and it is yummy.

YOU WILL NEED:

  • 250 grams self raising flour
  • 4 oz butter
  • 2 tspns (level) baking powder
  • 1 tspn soda bi-carbonate
  • 2 tspns vanilla essence
  • 1 tin (approx 400gms) sweet condensed milk
  • 5 oz water
  • 1 tbspn cocoa

METHOD:

Melt butter in microwave for about 20 seconds or until in liquid form. Add condensed milk, 5 oz water and vanilla essence. Mix in flour gradually with baking powder and soda bi-carbonate.

I put it in a heart shaped tin that I greased and dusted with a pinch of flour.

Bake at 200°C for 35 minutes. Remove and allow to cool. Decorate as desired.
