I saw a video tutorial on how to make these and decided to try them out. I forgot to bookmark the video so I made these from memory and they turned out pretty well. By the way, that picture you see is what I did. It’s not a random picture from the Internet.ย I’m sharing the recipe here…

INGREDIENTS:
1 tube ready rolled Puff Pastry (I used the Lyons Maid one readily available in most supermarkets)
Apricot jam/ preserve (I was gifted a jar of home made apricot preserve by my boss!)
2 red apples
1 lemon
1 tbsp Icing sugar
1 tspn (level) cinnamon (I used cinnamon sugar crystals)
METHOD:
Cut the apples in half, core and then cut very thin arched slices. As you can see from the picture, I could have sliced the apples a little thinner. Put in a bowl, add water, squeeze lemon juice, mix well and microwave for three minutes. remove, drain and dry.
Defrost the puff pastry, dust with a bit of flour and roll out. Cut 8 slices vertically, spread apricot jam all over, sprinkle icing sugar liberally with a sieve. Dust the cinnamon all over.
Arrange the apple slices on top half of this strip, fold strip in half then roll gently to make rosettes. Sprinkle some icing sugar and cinnamon on top.
Place in cupcake cases and bake in a moderate oven (180 deg C) for about 20 minutes.
Serve hot or cold; they taste great with ice cream or on their own.
