It used to be so difficult to find good mascarpone cheese but now it’s abundantly available. I quite like the Browns mascarpone. It’s seriously thick (or wickedly thick as it says on the container) and a delight to work with.
Here’s a simple recipe of a tiramisu dessert I made. I’d love to know what variations you use.
Ingredients:
2 tubs Browns mascarpone cheese
1 teaspoon vanilla extract
3 cups very strong coffee, cooled
2 heaped tablespoons icing sugar
36 lady finger pieces
A little milk
1 teaspoon cocoa
Method:
In a mixing bowl, put in the mascarpone, sugar and vanilla and whizz it gently with an electric hand mixer.
Add a little milk to soften the cheese because Browns cheese is wickedly thick. I love it.
Dip the lady fingers one by one in the cold coffee and create a layer in your serving dish. Slather a layer of the mascarpone mix, then repeat with another layer of the lady fingers.
You can put as many layers as you like but do make sure your top layer is the cheese mixture.
I decided to be a bit fancy and piped rosettes on top as the final layer of the dessert.
Dust the cocoa powder over the final layer with a sieve.
Refrigerate until ready to serve. Exercise no control if you wish.
My kids always say desserts go to the soul, not the tummy!
