Paneer Puffs

I’m not going to write a long childhood story or a history of how paneer was invented. I’m here to share a recipe that’s easy to make and is great for finger foods.

I’m actually made this for Christmas Day bitings for the ones who preferred vegetarian food.

Ingredients:

250gm Sirimon Paneer, finely grated

1 small onion, finely chopped

4 sprigs coriander, finely chopped

1 packet frozen puff pastry squares (10 slices)

Salt to taste

Red chilli to taste (optional)

Method:

Mix the paneer, onion, coriander, salt and chilli powder in a bowl.

Cut the pastry squares further into quarters then fashion into cups by folding the edges.

Spray a mini muffin pan with baking spray.

Stuff paneer mixture into pastry cups and place in tray.

Brush with a little oil.

Bake for 17 minutes on 220deg centigrade, or until golden brown.

Serve hot with ketchup or tamarind sauce.

These puffs can be made ahead and stored in an airtight container for a day, but do make sure when reheating, itโ€™s done under the grill and not microwave or theyโ€™ll become soggy.
