Pina Colada Pudding

This is a dessert I love to make when in a rush. Especially works for when you have impromptu guests and have the need to whip up a decent pudding. Very simple to make….

Pina Colada Pudding

YOU WILL NEED:

  • 1 tin crushed pineapple
  • 1 packet Marie biscuits, crushed
  • 1/2 litre fresh cream, whipped with a bit of icing sugar to sweeten the cream
  • 1 cup dessicated coconut

METHOD:

Combine the crushed pineapple, Marie biscuits and the dessicated coconut in a mixing bowl. Gently add the whipped cream and mix well. If the texture is too thick or too hard, add a bit of cold milk to this mixture and stir gently.

Spoon mixture into fancy dessert bowls and sprinkle a little bit of dessicated coconut on top. Add a chunk of pineapple slice on the rim of the dessert bowl and serve cold.

You could also put entire mixture into one big bowl and refrigerate. Works well if you have guests who prefer to have a just a spoonful or two of dessert.
