Simple portobello mushrooms

I found these amazing portobello mushrooms at Carrefour this week and decided to bake them.

Here’s the rather easy recipe!

Ingredients:

7 portobello mushrooms

1 punnet baby spinach

100g mozzarella cheese

1/2 white onion, diced

Salt & pepper for seasoning

Method:

Clean out the mushrooms with a spoon.

Chop one large mushroom into chunky bits.

Sautรฉ onion in a pan lightly brushed with oil. Add chopped spinach & chopped mushroom. Cook for about two minutes. Add salt & pepper to taste.

Brush ovenproof dish with a bit of oil. Place the remaining six cleaned out mushrooms in dish.

Scoop spinach mix into the mushroom bowls.

Top this with grated mozzarella cheese.

Now, I was just being polite with 100g cheese, but you do know that cheese is life and you can load as much as you think should be on the mushrooms!

Bake this for 20 minutes at 180deg C. Serve immediately with potato mash, sweet potato fries or a huge salad.
