Flourless Coconut Cookies

These are very simple to make and I have no childhood stories attached to the recipe so you don’t have to scroll down 146 times just to get to the ingredients list… ๐Ÿ˜๐Ÿ˜‰

Ingredients:

1 1/2 cups desiccated coconut

1 cup icing sugar

1 egg

1/2 teaspoon vanilla essence (optional)

1/2 cup freshly grated coconut (optional)

Method:

Heat oven to 180degC.

In a mixing bowl, add desiccated coconut, sifted icing sugar and egg. Add optional ingredients.

Coconut, sugar and egg.

Mix thoroughly until it forms a soft ball.

Grease a cookie tray or line with parchment paper/ silicone baking mat.

Pinch small amount of this dough, roll into ball, press down gently while on palm of hand before placing on baking tray.

Flatten the balls to for this shape

Bake for 15 or until light brown.

Allow to cool on tray for a few minutes.

A lovely golden brown colour.

You can serve them warm if you like. They can be stored in an airtight container for about a week, though they never last that long at my home!

Cook’s Tip:

You can also dip them in melted chocolate to make them more decadent.
