Frittata

Frittata is an egg-based Italian dish similar to an omelette or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses or vegetables.

The word frittata is Italian and roughly translates to “fried.”

This isn’t fried. I baked mine and they turned out fab.

Ingredients

4 eggs, beaten

Handful finely chopped baby spinach

1/4 red yellow pepper, finely chopped

4 slices ham, finely chopped

5 mushrooms, finely chopped

12 baby tomatoes, halved

1/2 cup grated cheddar cheese

1/4 cup milk

Salt to taste

Green chilli (optional)

Method:

Mix all the ingredients together in a mixing bowl.

Brush a little oil in a muffin pan.

Pour the mixture into the pan.

Bake at 180degC on the middle shelf for 15 minutes.

Serve hot!
