Coconut Flour Pancakes

I love pancakes but wheat flour isn’t kind to my digestive system so I thought I’d try out a recipe with coconut flour.

They’ve worked out quite well!

Ingredients:

2 heaped tablespoons coconut flour, sifted

5 eggs

1/4 cup rice milk

Method:

Beat eggs and gradually add sifted flour to mixing bowl.

Add the milk to slightly thin out the mixture.

(If you make it too runny, your pancakes will turn into scrambled pancakes!)

Spray non-stick pan with cooking spray (or lightly brush with oil).

Pour mixture and spread it out a bit with a fork.

Cook lightly on both sides until golden brown.

Serve hot with pancake syrup and coffee!
