If you’re on a high protein diet, you’ll enjoy this roast pork. It seems like a lot of work but it’s quite straightforward.
1kg pork tenderloin
For the rub:
1 heaped tablespoon dried rosemary
1 heaped teaspoon garlic powder
1 heaped teaspoon paprika
Salt & pepper to taste
1 teaspoon dry chilli flakes (optional)
For the basting sauce:
1/2 cup honey
1 heaped tablespoon Dijon mustard
1 heaped teaspoon minced garlic
1 tablespoon olive oil
Dry the pork with a paper towel. Spray the meat with cooking spray. If spray isn’t available, brush very lightly with oil. This ensures that the dry rub sticks to the meat.
Coat the meat with the dry rub. Sear the pork on both sides until brown in a hot pan smeared lightly with oil.
Place meat on a rack and brush both sides with the basting sauce generously.
Roast in a preheated oven for 45 minutes at 180°C.
Once cooked, allow to sit for five minutes.
Slice. Serve hot.
